Because I Love You

This week at Winco they had tomatoes on the vine for $.48 a pound so I bought 18 along with all the stuff to make pico de gallo.  They also had lettuce for $.28 a head so tonight we're having Cafe Rio Chicken Salads/Burritos.  Now Neil loves pico de gallo more than anything.  He loves how chunky it is and the flavor but the thought of dicing 12 tomatoes was ridiculous to me.  Of all things I hate chopping, tomatoes are at the top of my list.  At Deer Valley they had a gadget that diced a tomato perfectly and quickly but I have had no luck finding a home use one.  I really just wanted to put all the ingredients in my food processor and pulse it for salsa.  It will taste practically the same but then in my mind I saw the happy face of my husband as he devours it on chips and knew I wanted to make him smile so I diced all those tomatoes and have a huge bowl of pico de gallo.  There is so much I wonder if we can eat it all but I know Neil will and it will make him so happy.  Now that's love baby.
