Cafe Rio Night

Tomorrow is an Elder's Quorum Activity and Neil was in charge of getting the pulled pork. I ended up calling Cafe Rio like they wanted but they would not sell me just the meat so figured I'd have to make it for 60 people and started to look for recipes online. I've never had Cafe Rio's Sweet Shredded Pork, probably because I'm not a huge pork fan, but people just rave about it. Neil found someone else to get the pork from so I was off the hook but after reading all the great reviews I decided to make it tonight. Now I have not spent much time cooking the last little bit. I do whatever is easiest but today I decided to go all out and it was so worth it. I made the Cafe Rio Salad with the cilantro rice, black beans, pico de gallo and pork. I ate so much I made myself sick. Everything was really easy too. Here's the link to the recipes I used. I loved the dressing. I used 1/2 c sour cream and 1/2 c mayo instead of just mayo since I don't really like mayo. It makes a ton so it looks like we'll be eating a lot of salad the next couple days. I think there are better rice recipes but it was easy enough. I'm going to try chicken next time since that's my favorite.

Since I haven't spent a lot of time in the kitchen the boys weren't used to not having my attention and were driving me crazy. I just wanted to get dinner done. To make the pork you use Coca Cola, which I never buy since I'm a Pepsi fan. Well they didn't have caffeine free so I bought the regular stuff. Since I didn't want to save it I let the boys drink it for dinner and boy I don't know if it was that or what but something set them off. Mikey got down from the table and was literally running in circles and crawling like a dog all over the place making Conner and Sam laugh hysterically. Then those two started going crazy. Neil and I were not in the mood. We were so ready for them to go to bed and they were in bed at 8:30 but of course didn't fall asleep until 9:30 probably because they were so wired.
