Bicycle Rodeo

Since I'm now on the cub committee I volunteered to make the treats for the bicycle rodeo. I wanted the treats to go along with the theme so knew I needed to incorporate a bicycle. I finally settled on bicycle cupcakes. I made chocolate and vanilla cupcakes and then topped them with chocolate swiss buttercream, vanilla swiss buttercream and peanut butter mousse frosting. Ok I'm not a frosting fan but these three frostings were to die for. I stopped counting after the 6th chocolate with peanut butter frosting cupcake. It was so yummy yum yum. If you've never made swiss buttercream you have to try it. It's a little time consuming but the result is this smooth satiny frosting that is divine. It's not too sweet and it's fluffy, like a mixture between white mountain frosting and butter cream. Google swiss butter cream frosting and a video will come up and lots of recipes. I frosted my first batch with the peanut butter frosting and they were beautiful and then put all the dishes in the sink to wash and forgot my tip was in there and turned on the disposable. Yep my tip got chewed up. I was devastated. There was no way I could go to the store and get a new one because I had extra kids at the house as usual so I tried to salvage it but the rest didn't look so hot as you can see but then I realized they were for 8 to 10 year old boys and knew they wouldn't care so it was all good. I made over 100 cupcakes. I was so happy this day. It reminded me of the Mormon Message of President Uchdorft's talk about create. We are all blessed with a desire to create. Some of us create works of art, others clothes, crafts and I love to create food. It brings such a sense of accomplishment. I don't make fancy works of artr as much as I'd like to but I love it. Some day when I don't have a million little ones underfoot I'll get back into it. Until then, these little moments will have to suffice.
